I had never seen bamboo shoots in a farmers market before. After using them as a catchy prop for my photographs of the Blue Ridge Mountains and Shenandoah
Valley, I prepared the shoots for eating by following the instructions of the grower who was selling them at the market. I boiled them whole for about 10 minutes, then let them cool and peeled off the outer leaves, leaving a tender, fresh-tasting, parboiled bamboo shoot, ready to stir fry or add to a soup.
