There is plenty of elbow room at this market, and hundreds of empty parking spots nearby, a sharp contrast in both respects with the Union Square Greenmarket, an hour away in New York City, that I visited later on this day. This market is situated in the parking lot of the Princeton Junction train station, which is jam-packed with commuters heading into the city on week days but mostly empty on weekends. The market, which has an active friends-of-the market group that helps run it, is just wrapping up its 7th year in business. I last reported on this market on August, 26, 2006.

Did you know that the skin in delicata squash is edible? Neither did I until I was so informed by the display labels on the Stults Farm table where I purchased this selection of winter squash. Stults Farm, which has been in operation since 1915, is one of the mainstays at this market. As the farm’s web site states, the farm’s mission is “to sell only what we grow,” at farmers markets, a farm stand and through “pick your own” sales.
