I had never seen bamboo shoots in a
farmers market before. I followed the instructions of the
grower who was selling them, boiled the whole thing for
about 10 minutes, and peeled off the outer leaves,
leaving a tender, very fresh tasting shoot, ready to stir fry or add to a
soup.
